Cinnamon Rolls!

I loooove a good cinnamon bun, and even though it can really test your patience when waiting for the dough to rise, the end result really makes up for it.
The ingredients you'll need are:

For the dough:
2 1/2 tsp yeast
1/2 cup warm water
1/2 cup warm milk
50g sugar
75g melted butter
1 tsp salt
1 egg
3 1/2 - 4 cups plain flour

For the filling:
1/2 cup melted butter
3/4 cup sugar
2 tbsp ground cinnamon
1/4 cup dessicated coconut (optional)
Nuts, raisins etc (optional)

For the icing:
110g butter
3/4 cup sugar
1 tsp vanilla
225g cream cheese

Now, start off by dissolving your yeast in a small bowl of warm water and set it aside.

In a larger bowl, mix together the milk, sugar, butter, salt and egg. Add two cups of flour and mix until it's smooth. Add in the yeast and water mixture then mix in the remaining flour a bit at a time until the dough is smooth and easier to handle.

Pop the dough out onto a floured surface and knead for 5 - 10 minutes. Now you'll need to place the dough in a well-greased bowl and leave it to double in size for about 1 to 1 1/2 hours. I put mine on a sunny window ledge and it grew in no time!


While that's going on, you'll need to make the filling for the buns! Just mix together the filling ingredients and that's it! If you want to add coconut or raisins or anything like that it is totally up to you. Once the dough has risen, punch out the air and roll it out into a rectangle. Spread your filling all over the dough and start rolling it up making sure to make it as tight as possible. Cut off the ends and cut the rest of the dough into even pieces and put into a baking tray lined with grease proof paper.

Leave the dough to rise (again!) for 45 minutes, and pre-heat your oven to 350F/180C/Gas Mark 4. Bake the rolls for 30 minutes until they are beautifully golden and that's it! My family and I aren't too big on the icing, but it's totally an option if you want to put it on. Mix all the ingredients together and slather it on the warm buns as soon as they are out of the oven.

These are great to eat for breakfast or dessert - whatever tickles your fancy! I like to heat them up for  a few seconds in the microwave and eat them with a cup of green tea.
